Inspired by Adeline of http://accidental-mom-blogger.blogspot.sg, I decided to try my hand at making ondeh ondeh some time last week. Her recipe looked really simple and I thought I could handle it. It was an alright first try with skin that's a little too thick, but hey, they were not too bad! Joey ate more than one (that says ALOT) and my MIL said she liked it! You should totally try making some too - To me, ondeh ondeh is a dessert that looks difficult to make, but is actually a really easy one to prepare.
Ingredients:
1 cup of Glutinous rice flour
1 sweet potato
1 piece of gula malacca
1 stalk of pandan leaf
Desiccated coconut
Water
Firstly, use a knife to scrap the gula malacca into small shreds.
Boil the sweet potato, remove the skin and mash it.
Mix sweet potato mash with glutinous rice flour and water, and knead it into a dough.
Separate the dough into small portions like these:
Take each small dough, flatten and put in a portion of gula malacca before rolling it up into a ball.
Boil a pot of water with pandan leaf, put in the dough balls to cook. Once they float to the surface, they are cooked.
Roll the balls in a bed of desiccated coconut until all coated. (I put a pinch of salt into the coconut because I wanted some saltiness when I eat it) Viola! Ondeh Ondeh done!
Have a great weekend, everyone! :)
